It's important to not always mirror what professors write because sometimes the words they use aren't appropriate for students to use. You may see professors sign off with 『では、よろしくおねがいします』. If you use『では』, it tells the other person that you're ordering them to do something.
Some people, when they want to say "thank you" at the end of an email, they tend say 『ありがとうございます』. On its own, this sounds sort of weird. If you want to thank someone for doing something, you usually re-state what you're thanking them for and write it towards the beginning of your message. For example, "Thank you so much for everything today, it was great!" 『きょうはありがとうございました!』, "Thanks for helping me with the homework" 『しゅくだい を てつだってくれて、ありがとうございました。』, etc.
